Recipe of the month- Okra with chicken
1 chicken cut into portions, 1kg okra, 1 tin chopped tomatoes, ½ cup oil, 1 finely chopped onion, salt and pepper.
Heat oil in a saucepan and fry the chicken until brown. Remove chicken and let it drain. Add a little more oil and fry the okra until it softens. Remove okra from pan and let it drain.
Add a little more oil and fry the onion. Add chickens and tomatoes. Stir well and bring food to boil. Add okra, enough water to cover the chicken, salt and pepper. Bring to boil, lower heat and let it simmer for about an hour.
